INGREDIENTS
1/4 cup chopped green pepper
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup milk
1 (14.5 ounce) can stewed tomatoes
1 (6 ounce) can tuna, drained and flaked
1 teaspoon Creole seasoning
Hot cooked rice

DIRECTIONS
In a saucepan, saute green pepper in butter until tender. Stir in the flour, sugar, salt and pepper until blended. Gradually add milk, stirring constantly. Stir in tomatoes. Bring to a boil; cook and stir for 2 minutes. Add tuna and Creole seasoning; heat through. Serve over rice if desired.
FOOTNOTES
The following spices may be substituted for the Creole seasoning-1/2 teaspoon each paprika and garlic powder, and a pinch each cayenne pepper, dried thyme and ground cumin.

I absolutely loved this recipe even though I didn't have any stewed tomatoes on hand or cajun seasoning. I used a can of diced tomatoes primavera and the optional seasonings listed below the recipe. It turned out delicious over rice. I can't wait to try the leftovers tomorrow!

The tomatoes completely over-powered the other flavors - I might try this recipe again with a bit of doctoring and maybe just 1/2 a can of tomatoes.

So easy and fast! I only had Rotel, so used that instead of tomatoes - boy was it hot! Next time I'll definately stick to regular tomatoes (or mild Rotel). The kids probably wouldn't touch it, but it's perfect for a quick meal for myself.
