Grasshopper Pie II

There 's lots of melted marshmallows, whipped cream, evaporated milk, cr Eme de cacao and cr Eme de menthe in this luscious pie. The filling is piled into a chocolate cookie crust and chilled overnight. Garnish with crushed peppermint cookies -if you dare.

This light and airy pie gets its fluffy texture from the whipped egg whites and whipped cream folded into the chocolate mousse filling. This lovely concoction is spooned into a chocolate crust and topped with chocolate whipped cream flavored with a bit of vanilla and almond extract. Chill and serve.

This pie tastes like the traditional grasshopper pie only it does not contain alcohol. It's great in the summer because of its light texture. If desired, top with dark chocolate shavings before serving.

How can something so simple taste so rich and delicious? Butter is creamed and blended with melted chocolate, vanilla, and eggs, then beaten until thick and fluffy, and poured into a baked pie shell. Once the pie chills thoroughly, it can be served with whipped cream and a sprinkling of nuts for the crowing touch.
