  1. Blend zucchini, lemon juice, tahini, garlic, and salt in a blender until creamy. Stream olive oil into the hummus while blending until completely incorporated. Continue blending until smooth, 1 to 2 minutes. Transfer to a serving bowl; sprinkle cumin and paprika over the hummus.

Very nice flavor. I did add a couple of items. Some green bell peppers and a jalapeño pepper, extra curry and garlic and a can of garbanzo beans to thicken a bit more.

Pretty good ~ I also used ground flax to thicken it up. Careful with the garlic ~ it can overwhelm.

Nice recipe. I added more spice & garnished with sesame seeds on top. To thicken it I added ground flax seed: Healthy & it's nutty taste complements the recipe.

This was a great regipe. I make two batches, one with just zucchini and the other with both zucchini and garbanzo beans. I also included garlic, which I love, love love! As much as I love it, this is the first time I've attempted to make it. Thanks so much for the recipe.

I roasted the zucchini in the olive oil, garlic, lemon and salt before blending. It is not thick, like standard hummus, but still delicious!
