Another labor-intensive side, but this was completely worth it!!! Followed northlake-kat's suggestion of no foil, and rubbing in olive oil and garlic - this made for perfectly crispy skins! Instead of paprika, I used Penzey's Black & Red. Added some garlic. Topped with Low-Fat Cheddar and green onions.

LOOK NO FARTHER-this is it! SO creamy and yummy. This recipe is absolutely amazing. I added crumbled bacon and cheddar to top-and it was PERFECT!

My husband and I enjoyed this recipe. We used Jalapeno cream cheese (Einstein Bagels) and it jazzed up the flavor. I will be using this again to freeze and eat for snacks or lunches by experimenting with different cream cheese flavors. Thanks for a great base recipe!

I make this dish often because it sooo freaking good! I season my potatoes with lawrys season salt, garlic powder and black pepper. Then to the mixture I add some shredded cheese as well as the cream cheese. And I omit the paprika. YUMMMY!

Oh my stars....I thought these were great! Everyone loved them. I certainly didn't follow the recipe when it came to salt and pepper - I added these to suit our tastes. I made six large potatoes. I like these better than traditional twice-baked! I didn't add chives, or scallions, or bacon, or cheese, etc. - I felt they were just great as is!

My family enjoyed these. I made the filling just as stated, but did add green onions and cheese on top. I felt it was a good base filling, but I would probably add more fillers next time - maybe green onions and cheese inside the filling, and maybe even some herbs. But this is a great place to start and was very easy. Thanks for a great recipe!

Very YUMMY!! I liked the change from sour cream to cream cheese. I did mix some of the shredded cheddar into potato mixture and then sprinkled the rest on the top and sprinkled bacon bits and baked for another 5-10 minutes until cheese was melted

Yum Yum Yum Yum! Made with a filet mignon and we had a restaurant worthy meal. Only things I did differently- I added a little cheddar and fresh chives from my garden. Thanks for the recipe!

This was good but not amazing, I added some garlic powder to give the filling some pop but next time i'm going to have to put something more into it because it still was a little on the bland side.

I served these with the Bacon Roasted chicken from this site. After the potatoes were baked, I added cheddar cheese and the bacon from the chicken on top, then baked a few minutes more. I noticed my dinner guests finished their potato FIRST so I knew it was good!
