Just tried it tonight - very yummy. I used pre-cooked, frozen shrimp. It would probably be better with fresh, but I didn't have any on hand. Next time I'm going to try it with a small amount of garlic or maybe cayenne to give it a bit of kick.

This was REALLY, REALLY good! I think I will try to omit the butter next time and just cook the veggies in cooking spray. I didn't have any yogurt, so I substituted cream cheese and used reduced fat sour cream instead of full fat. It was really great! I served the shrimp over couscous - yummy!
