Creamy Poppy Seed Dressing

INGREDIENTS

  • 1/2 cup orange juice
  • 1/2 cup fat-free mayonnaise
  • 1/2 cup reduced-fat sour cream
  • 2 teaspoons sugar
  • 2 teaspoons lemon juice
  • 1 teaspoon poppy seeds
  • 1/8 teaspoon pepper

DIRECTIONS

  1. In a jar with a tight-fitting lid, combine all of the ingredients; shake well. Cover and refrigerate until serving.

  • Nutritional Analysis: One serving (2 tablespoons salad dressing) equals 31 calories, 1 g fat (1 g saturated fat), 4 mg cholesterol, 87 mg sodium, 4 g carbohydrate, trace fiber, 1 g protein. Diabetic Exchange: 1/2 starch.
