Creamy Pesto Chicken

"All the flavors of Italian pesto (fresh basil, pine nuts, Parmesan, and garlic) in a simple creamy sauce. Also works well with thinly sliced pork tenderloin. Add a splash of milk or cream for a slightly thinner sauce. Serve over rice or pasta with extra Parmesan cheese to sprinkle on top."

1 tablespoon extra virgin olive oil
4 skinless, boneless chicken breast halves - cut into strips
4 large cloves garlic, sliced
3 1/2 tablespoons sherry
1/4 cup pine nuts
1/2 cup chopped fresh basil
1 (8 ounce) container reduced fat sour cream
3 tablespoons grated Parmesan cheese
ground black pepper to taste

DIRECTIONS
Heat the olive oil in a skillet over medium heat, and cook the chicken for about 5 minutes, until lightly browned. Mix the garlic and sherry into the skillet. Cook and stir until all the liquid has been reduced and the chicken is no longer pink and juices run clear.
Mix the pine nuts into the skillet, and cook 2 to 3 minutes over medium heat. Reduce the heat to low, and mix in the basil, sour cream, Parmesan cheese, and pepper. Continue cooking until heated through.

Excellent recipe!!! My husband and I both loved it!!! I added some sun dried tomatos and didn't have sherry so I just used some red wine that I had instead. My husband and I both love garlic, so I added extra. We're having it for dinner again tonight -second time this week!

A very romantic dinner to eat with my new, amazing girlfriend. "It made our day so much better," she says. Real quick easy great tasting chicken dish. Fantastic with pasta.

I love this recipe. It's easy and tasty. The only change I make is to add a little milk at the end to create a sauce. That way there is more to enjoy.

This was a great tasting and easy to prepare dish! I followed recipe exactly and it was very tasty. Perhaps the only thing I might do differently next time is make more of the sauce since there wasn't really enough sauce to add a little pasta to the dish. Thanks for the recipe Jodie4!

I have tried this recipe two times, and have found it to be a let down. While it is very flavorful, there is absolutely no creaminess to it. I will not make this again.

This is a wonderful and easy creamy pesto recipe. I ended up blending the garlic, basil, pine nuts and cream in a blender and then added the sauce to the already cooked chichen and let it simmer for a few minutes. I served it over white rice. Great recipe! Thank you.

I made this recipe for a course I'm taking and it was a total hit. It didn't take very long at all and was a hit even with the people who don't like reuglar pesto sauces.

Outstanding and easy! Even my pickiest eater (11 yrs old) loved it. Since I had a 10 oz jar of pesto sauce, I substituted that for the pine nuts & basil. It worked out wonderfully. We'll make this one over and over!
