Inexplicably, I forgot to use chicken broth. Presumably because the potatoes did not have salt infusion from the broth, I had to add salt while mixing. As I tasted the potatoes, it was clear they did not have enough salt. Don't knock yourself out searching for Neufchatel Cheese; it's just a low-fat version of cream cheese and if you are not particularly concerned about calories, regular cream cheese will work just fine. I finally found Neufchatel Cheese in the dairy case next to the other cream cheese products. I had difficulty finding it. Store employees seemed baffled when I ask about it, as if they had never heard of it. I doubled the recipe and it was great.

Creamy, rich and delicious! This is comfort food at it's best. And it's lightened up yet still has all the flavor you'd expect from really good mashed potatoes. I added a bit of salt, pepper and garlic. Excellent side dish that pairs well with just about anything!

I made these with russet potatoes instead of red, as that was what I had on hand. I loved the flavor, very full and savory. Served with bourbon pecan chicken from this site, as the savory potatoes and the tangy sweetness of the bourbon sauce complemented each other very well.
