Creamy Orange Fluff

"I got this yummy recipe from a friend but came up with my own tasty topping. Creamy, fruity and refreshing, this dish is simple to make ahead and cuts nicely into squares for ease in serving. It is perfect for potlucks."

INGREDIENTS

  • 1 (6 ounce) package orange gelatin
  • 2 1/2 cups boiling water
  • 2 (11 ounce) cans mandarin oranges, drained
  • 1 (8 ounce) can crushed pineapple, undrained
  • 1 (6 ounce) can frozen orange juice concentrate, thawed
  • TOPPING:
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup cold milk
  • 1 (3.4 ounce) package instant vanilla pudding mix

DIRECTIONS

  1. In a bowl, dissolve gelatin in boiling water. Stir in oranges, pineapple and orange juice concentrate. Coat at 13-in. x 9-in. x 2-in. dish with nonstick cooking spray; add gelatin mixture. Refrigerate until firm. In a mixing bowl, beat cream cheese until light. Gradually add milk and pudding mix; beat until smooth. Spread over orange layer. Chill until firm.

this recipe is outstanding IF YOU REDUCE THE WATER BY HALF. brought this to a potluck and did not bring any back home.
