"This bean soup is thickened with a mash of potatoes, cauliflower, and carrots. Delicious comfort food! It is gluten-free and can be made dairy-free by using olive oil instead of butter and unsweetened soy milk in place of cow's milk. Enjoy!"

Yukon Gold potato, peeled and diced
salt and ground black pepper to taste
1 (14 ounce) can
navy beans, undrained
1 (14 ounce) can
navy beans, drained
Very good and very filling soup ,but it needed more broth then written. Going in my recipe box.
Great combo of ingredients. I agree with the other reviewer that it needs more broth. I actually left my veggies a little chunky instead of completely blending them and I still ended up needing more liquid. I left both cans of beans undrained and added another cup of broth and that was perfect. I loved the flavor combo and I will make often.

Pile it into a tomato half, load it into a wrap, or spread it on bread. Chicken salad does it all.
Broccoli salad makes a great side dish or a light main dish on a warm night.
