skinless, boneless chicken breast halves, cut into bite-size pieces

Great recipe, and one I'll make again. I made some minor substitutions, like coffee cream instead of whipping (just allow an additional couple of minutes to thicken), and about 2-3 tsps. of dried basil instead of fresh, but the recipe as written would have tasted just as great. For the veggies, I used one yellow and one red pepper, and also added a sliced up zucchini for additional colour.
This recipe was really easy and it tasted excellent. I will make again !!!

This is excellent! I'm sure it is not very good for you, with all the dairy fat. But it sure tastes good! I marinated the chicken in some balsamic vinaigrette first. I only had two smallish peppers from the garden, so added a sliced vidalia onion. Sauteed the onion a couple of minutes on its own before adding peppers. Next time I might try a lighter version of the Alfredo sauce with the peppers and chicken.
This was just delicious for a quick, easy, dinner for 2, the flavor was great I did not change a thing!
Really easy recipe that the whole family enjoyed! I added some extra veggies because we were low on the green peppers. I added 1 head of broccoli (just the tops and used about an inch of the stems, not the whole stems). I chopped it up into bit sized pieces, and added about 15 baby carrots chopped into bite sized pieces. I cooked all the veggies together following the cooking time in the recipe and It turned out great. I also used 2 oz of minced garlic instead of chopping up the garlic by hand. Great recipe!
