Made these for our flower party the day before my wedding. I didn't think people would like them (especially because of the crowd) but they all got gobbled up! They're a good 'grazing' snack.

I used half the amount of seasoning and still thought it was a bit salty. However, the toast and the cucumber balances out the saltiness perfectly... I garnished with fresh dill sprigs and a small dash of paprika.

This was so nice and different - not to mention simple which is a must for appetizers which get so fussy! I toasted the bread to help keep it from getting soggy and a used the italian dressing to taste instead of the whole packet. Everyone loved them and I thought they were a great little bite - even the kids ate them.

Great recipe; I have a recipe very similar to this. The key to mine is to soak the cucumber slices in 1/2 cup cider vinegar and 1 cup water for about 30 minutes prior to assembling the sandwiches. It gives them that little "something extra."

I made this for a shower and it went over very well. I mixed it together the night before and added half (1 tsp)of the dill. The next day I spread it on cocktail rye bread and used seedless cucumber and sprinkled with the remaining dill. It was a big hit.

These were FANTASTIC! A great alternative to cucumber sandwiches. I combined all the ingredients the night before to let them really blend together. My guests devoured them and then asked for the recipe. I will definitely be making these again. Thanks for sharing!

Excellent! Refreshing! Pretty! I served this as an appetizer at my dinner party with great reviews. I made fresh French Baguettes from this website as my base and it was great. I did use half of the Italian seasoning as it would have been too salty otherwise. I also had fresh little cucumbers from the garden on top which were delightful. My Mom made this 20 years ago and I forgot about them until I saw this recipe and I so glad I found it back. I won't lose this one.

Even more scrumptious if you let the flavors in the cream cheese mixture meld over 24 hours. I liked using sour cream as a substitute for mayo, but that's just a personal preference.

There is absolutely nothing that I would change with this recipe. It's especially perfect for baby showers or gatherings. I sometimes make these for my husband as a pre-dinner snack.

I am a picky person when it comes to recipes from this site. This was WAAAAY better than I even expected! And I expected alot from the reviews! I added fresh dill, minced, to the cream cheese mixture and after the flavors had time to mingle (8 hours or so) the fresh dill taste was HEAVENLY. In my opinion, fresh dill for this recipe is a must. A helpful hint: use a potato peeler to peel the cucumber, then just keep going at it with the peeler to create a bunch of thin cucumber slices. when you get to the seeds, stop. You'll end up with PLENTY of slices from one or two cucumbers. Then take each slice and wrap it around your finger like a little circle with it. Then you lay it on the cream cheese spread, and its super fast and easy that way. If you want to get even fancier, you could put a sprig of fresh dill inside the little cucumber ring. A thin peel of cucumber is just the right amount for this recipe and is more pretty than thick slices as some people have done.Preparing it like the photo is hard to arrange. (the curly little twist.) I used ritz crakers which were absolutely WONDERFUL with this recipe. I am going to use it for everyday eating too! It's addicting! And SOOOO easy to make if you use ritz crackers!
