I was looking for a basic recipe with things I had on hand and this fit the bill. I used leftover rotisserie chicken, frozen mixed veggies, and cream of chicken with herbs. A good, relatively healthy option to send in my husband's lunch.

Yummy! This is one of those great weekday night meals you can make in a pinch. I didn't use the canned chicken. Instead I dumped a bag of frozen shredded chicken (about 1-2 cups) I had from a seasoned roasted chicken I made a few week back. It broke up quickly and definitely helped in flavor.
