My family was a little put off by the look of this recipe but loved it and even came back for seconds. I used a bag of Uncle Ben's Natural Select roast chicken flavored rice and did what other reviewers suggested and added 1c sour cream and 1 can mushroom soup. I used a rotisserie chicken that was leftover from another meal and i added onions, carrots and peas to this recipe. For the topping i omitted the chow mein noodles and used french fried onions and about 1c of shredded cheese. Will definitely make this again! Thank you for sharing!

I made a few additions as other reviewers recommended and this turned out delicious. I only had regular brown rice so I boiled it in chicken broth and added carrots to the broth because I was going for a casserole meal. I boiled the chicken with chicken bouillon cubes. I then cut the sour cream to 1 cup and added a can of cream of mushroom soup. I mixed in pepper,salt, garlic pepper, and paprika. I didn't have any chow mein noodles so I used the fried onions. I topped it with the onions in the last 5 minutes of cooking. Very easy to make and very good.

Loved this dish!! My kids loved it even more! I think next time, instead of chow main noodles, I will try crushed ritz crackers....I wasn't very fond of the chow mein noodles.

This came out pretty good. These casserole recipes tend to come out bland, but I cooked the rice in chicken broth for more flavor. I substituted garlic/butter croutons on the top for the chow mein noodles and added ground pepper before cooking. I think my kids will like this one!

Easy, yummy, family pleasing - That's a 5 star recipe in my book! I added some garlic salt and ground black pepper to the mix along with 2 oz. cream cheese. Didn't have the chow mein noodles, so I used crushed tortilla chips and added shredded monterey jack cheese over top.

I mistakenly bought the family size of the rice, but decided to make it all. I used a can of cream of mushroom soup as a sub for 1 cup of the sour cream. I also added 2 cloves of garlic and used the french onions. We LOVED IT! Great for my hangover!

This is one of my favorite meals to throw together. I use french fried onions (I don't usually have chow mein, so I use what I have on hand.) I've also thrown in a can of peas for color. It goes fast in my house!

I think this is a great base recipe to build from for the meal. I added carrots to the rice cooking. Then for the baking portion, I added frozen corn and peas with the chicken. Added about 2 oz. of cream cheese with the sour cream. Smells great so far! I also used the fried onions on top.

I probably should have taken advice from some of the edited recipes - water chestnuts, French fried onions, etc. This was not my favorite recipe. In addition, when I reheated it in the microwave, the chow mein noodles lost any crispness.
