This was lovely. It was the first time that I had ever tasted carrot soup, and I didn't quite know what to expect, but I am now a big fan. I substituted 1/2 tablespoon of the curry for an equal amount of garam marsala, put in an extra 3 cloves of garlic and a tart apple but otherwise followed the recipe, and the soup was a wonderful blend of sweet and deep, mellow spicy. I ate it with garlic bread and it was perfect together. Really, the only negative thing is that - for me at least - it took a lot longer to both saute and simmer the carrots until tender than the recipe states. About twice as long.
