Great winter soul food, terrific with chops or brats. Mildly sweet and sour, this dish smells divine and just makes you feel good. Leftovers, if that's possible, are even better and keep well.

I use this dish often when the schedule gets tight and I need a 'hurry up' vegetable to cook. It adds plenty of substance to a simple meal.

MY HERITAGE is Russian, and I have always loved cabbage. My husband didn't like it at all - until I prepared it this way. Since we're diet-conscious these days, I scaled down the cheese and use low-fat milk, but it's still delicious. -Katherine Stallwood, Kennewick, Washington

CRUNCHY and colorful, this side dish has the flavor and texture of creamy coleslaw, but it's served warm. It's a nice change from typical vegetable dishes. I serve it often with any meat entree. -Bernice Knutson, Soldier, Iowa

I've taken this dish to many church dinners and receive good comments every time. If your children won't eat cabbage, try making this recipe for them (but don't tell them what's in it!).

'I HELPED MOTHER shred the cabbage and cut up the apples for this recipe. The touch of tartness is wonderful with the sauerbraten. This is one part of the meal that is even tastier if it can be made ahead.'
