Directions

  1. Cook and stir onions in butter in medium saucepan on medium-high heat 3 to 5 min. or until onions are crisp-tender. Blend in flour.
  2. Add milk and cream cheese; cook on medium heat 2 min. or until cream cheese is melted, stirring frequently.
  3. Stir in remaining ingredients; cook 5 min. or until heated through, stirring occasionally.

  • Substitute: Prepare using VELVEETA 2% Milk Pasteurized Prepared Cheese Product.
  • Substitute: Substitute frozen chopped spinach; frozen cauliflower florets, chopped; or frozen asparagus spears, chopped; for the broccoli.
  • Use Your Microwave: Microwave onions and butter in 2 quart microwaveable bowl on HIGH 30 sec. or until onions are crisp-tender. Stir in milk. Nothing really wow-ed me about this recipe, but it was a good last-minute dinner solution and a great way to use odds and ends from my fridge. The nutmeg is necessary - don't skiip!

I enjoy most soups, I don't know if it was the cream cheese or what but it had an awful gritty, almost curdled texture. I was not satisfied at all.

The name "creamy broccoli soup" is what this is, not a broccoli cheddar soup which has a bold taste. The philadelphia cream cheese plus milk just ends up a flavorless cream that is only mildly augmented by the cheese, so overall this dish was extremely bland.

This is a great dish. I added sausage to it and it was great.

It is a quick simple recipe, and the taste is ok, probably should use less broccoli then recommended. The cream cheese does not meal and make it a creamy soup, it is actually VERY VERY gritty!
