1 large firm banana, sliced
1/2 teaspoon lemon juice
3 tablespoons mayonnaise
1/2 teaspoon sugar
2 cups torn mixed salad greens
5 fresh strawberries, sliced
1 tablespoon salted peanuts, chopped

DIRECTIONS
Lightly toss banana slices with lemon juice. Place 1/4 cup in a small bowl; mash. Stir in the mayonnaise and sugar. In a salad bowl, combine the greens, strawberries and remaining banana slices; toss. Top with banana dressing; sprinkle with peanuts.

Nutritional Analysis: 1-1/2 cups (prepared with fat-free mayonnaise and sugar substitute) equals 124 calories, 3 g fat (1 g saturated fat), 2 mg cholesterol, 214 mg sodium, 24 g carbohydrate, 4 g fiber, 3 g protein.

Delicious! But: The mayonnaise was a little too much for me. I used half the amount, and substituted the rest with yogurt. I also added extra lemon juice to thin it out a bit, both in texture and in flavor. I did not have strawberries or any other fresh fruit around the house, but was pleasantly surprised that it works (almost) as well with veggies.

This salad was such a surprize! It was so delicious and tasted like no salad I have ever had. My guests were skeptical at first, but upset when they didn't get seconds!

Yum! Couldn't be better. I was trying to find a recipe for the simple banana salad my grandmother used to make - consisting of only lettuce, bananas, sugar and mayonnaise with paprika sprinkled on top (I think that's it). But, I found this one instead and couldn't be happier. It makes a much prettier presentation - and the strawberries really add some nice tang. Excellent!

My husband and I loved this salad. It was very different from our typical, but had a refreshing taste and was easy to make. My husband said it was like eating a salad and dessert in one. We will definitely make it again exactly as written!

I made this for dinner last night, and it was EXCELLENT! My hubby rarely is excited for a salad, but he LOVED this. Not too sweet like some of the poppyseed recipes, and very refreshing for summer. I can't wait to make it again. Thank you!

This salad is awesome. It is so refreshing. All the different ingredients blend into a great palate taste. I substituted walnuts for the peanuts. I served this to dinner guest. They ate every bit. All went home with the recipe. Enjoy!
