Love this! I was concerned about the onion rings, so I caramelized diced onion til brown and added some grated garlic to the last few minutes of cooking the onions and sprinkled them between the layers instead. I think the amt. of cheese is great as is. I used a fork to gently lift layers of taters to let cheese seep everywhere. It's delicious with ham, pork, chicken, anything really! Excellent cheese sauce for mac and cheese (i do a similar one, but this is better somehow) too. I made one batch of the sauce for 16 oz of egg noodles (was out of elbow) and at first it looked like it would be too much sauce. I used it all anyway, because I didn't want to waste it and it was wonderful. I will use elbow or another heartier noodle next time though. Thanks CathyM for a great recipe we will enjoy for years.
