Creamed Hard Boiled Eggs

INGREDIENTS

  • 8 eggs
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/4 cup grated Parmesan cheese
  • salt and pepper to taste

DIRECTIONS

  1. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  2. Melt butter in a small saucepan over medium heat. Whisk in flour; when thoroughly blended, slowly add milk, stirring constantly. Cook until thickened. Stir in cheese.
  3. Pour sauce over chopped, boiled eggs.

I haven't actually made this recipe, but I love how the eggs turn out using the recipe's boiling method. I never knew how long to boil eggs before, and this method SAVES ENERGY too!! Thanks

I'm amazed to see this recipe online! My mother made this for family breakfasts my entire life....and I love it! We serve the eggs over wheat toast and it's just delicious. Also, you might want to try omitting the cheese and flavoring the sauce with onion powder. It's killer!

I agree.....your method for boiling the eggs is wonderful. I always fuddled around looking for the best way to boil them but this definately works wonderfully!
