This was ridiculously good!!!! Made it for lunch and my 2 year old had 3 servings. Very easy. I did put the spinach mixture in the blender for just a second (which made the soup a darker green) and added a little garlic powder and chicken broth. Very forgiving recipe, as I didn't measure a thing. Thanks! It's a keeper!

Great recipe! My fiance normally doesn't like soup, but he loved this. Used fresh garlic and onion and a little cream like the other reviewers suggested.

Awesome on a cold Monday. Used low fat chicken broth added broccoli, cauliflower and spinach from the garden. Added to the roux and emulsified but left it pretty chunky. Love eating local. Thanks for the recipe.

OH MY GOSH THIS IS SOOOOO DIVINE!!!!! IT IS OH SO TASTY AND I JUST LOVE IT! It's so creamy and delicious and hey, it's not the healthiest thing i've eaten, but I was very pleased with it! It is wicked good! I LOVED it; emphasis on the LOVED! I HIGHLY recommend this recipe! It is awesome! Everyone in my whole picky family loved it! OMG toooo good. I used 1 cup heavy cream, 1 cup half&half, and 1 cup 2% milk and followed the rest of the recipe. Came out soooo good. Thanks for the recipe.

I make this soup at least twice a month for my family. My son and husband don't even like spinach and they both love this soup. It is even better the next day. =)Love IT!!!

I made the soup with a few changes recommended by other users and a few of my own. I substituted chicken broth for water and bouillon. I used 1 lb. fresh spinach, which I ran through a food processor before cooking. I included 1 leaf of fresh basil with the spinach. I added a pinch of cayanne, a pinch of dill, and the juice of 1 lemon prior to adding the roux. The lemon was really great, next time I will juice 2. I also sprinkled fresh Parmesan on top just before serving. I will definitely make this again :)

This is a very mild but surprisingly yummy soup. Probably a good one to make if want to get more veggies into your kids. Definitely will make it again.

This was excellent..I doubled it and used fresh spinach. I also sauteed chopped onions, carrots and 2 cloves of garlic in olive oil before adding the chicken broth. Also followed other reviewers and added, thyme, nutmeg, 1/4 cup parm cheese and cayenne pepper. I had alot of half & half to use up so used mostly that instead of milk...not the healthiest I suppose but yummy!

very good, I used fresh spinach and 1 cup half and half in place of one cup milk to make it a bit creamier. I also added cooked chicken at the end. It was wonderful.

I added garlic, onion, and paprika to the ingredients, but otherwise made the recipe as written. I thought it had a great flavor, and I love that it was so quick and simple to make. I'll use this recipe again and again as a base and try different combinations of vegetables and spices in the future.

This soup is delicious and so easy to make. My mother-in law makes a great cream of spinach soup but I would have to say that this one is even better (even my husband says so, but we won't tell my mother in law.) I also used fresh spinach instead of frozen and sauteed red onion and garlic with the butter, before adding the flour. Will def make again!

The only reason I'm not giving this 5-stars is because I did follow other reviewers' suggestions to add cayenne, nutmeg, garlic, fresh onion instead of powder, and parmesan. This recipe is very versatile, I'm sure you could do a lot with it. I even ran out of skim milk (I only got 2 1/4 of the 3 cups needed) and it still came out fine. Yum!!!

i loved this recipe..like other reviews i used can chicken broth and fresh sauteed onions and garlic..i also added 1/4 cup cheddar cheese and 4 slices american cheese..so quick and fabulous

This was a wonderful way to use the spinach that is past its salad days. Instead of the bouillon and water I used a can of low sodium chicken broth. I also ran the spinach/broth through a food processor for a creamier soup. And added 1/2 shredded cheddar cheese.
