Cream of Chicken and Gnocchi Soup

  1. Melt butter in a large, heavy saucepan over medium heat; cook and stir onion, celery, carrot, and garlic until softened, 5 to 10 minutes. Stir flour into vegetable mixture; cook and stir until vegetables are evenly coated and flour is fragrant, 3 to 4 minutes.
  2. Pour chicken broth, half-and-half, and milk over vegetable mixture; cook and stir until mixture thickens and comes to a boil, about 5 minutes. Reduce heat and stir gnocchi, chicken, and spinach into broth mixture; season with rosemary, salt, black pepper, and nutmeg. Cook soup over low heat until gnocchi become tender, 8 to 10 minutes.

  • You can buy frozen gnocchi and place in slow cooker for 2 hours. Or cook entire soup in a slow cooker until flavors blend, 1 to 1 1/2 hours.

Really good -- DON'T FORGET TO TOP WITH GRATED PARMESAN (we luv Romano) before eating!! Totally necessary ;) Kids and hubs ate a lot including leftovers even though there was vegetable looking matter (spinach)... We are OG goers, I love this soup and have not detected any hint of celery or other distinctive spicing. So, I did not use nutmeg, rosemary, or celery. I also used all 2% milk for the two listed dairy ingredients and did need a bit of cornstarch at the end. This is a great recipe.

I could not get enough of this soup!! My husband orders this all the time when we go to Olive Garden so when I saw this recipe I had to try it. I followed the recipe exactly. I finely grated the carrots so that during cooking they dissolved; which was what I wanted (my husband does not eat cooked carrots). I also used homemade gnocchi & fresh spinach because that was all I had. My soup was a little thick so next time I think I will use more milk and less half n half. Each bowl was topped with grated parmigiana. A must try!! Both kids and hubby devoured it.

This turned out really good! I had to cook my chicken and boil my gnocchi (I bought them frozen) before what the actual recipe calls for. Other than that the recipe turned out great.

I made this recipe -almost verbatim but I am embarrassed to admit I only had canned chicken on hand (this NEVER happens so I was appalled at first). It is amazing and actually ends up pretty thick but we love it!!! what an awesome combination of foods, flavors and consistencies! This is a new go-to recipe for those cold nights or snow days!!!
