I've tried several of the other recipes for broccoli soup on this site and this one is definitely the best. Really, really decadent when made with half and half - but you only live once!

This was my first try at Cream of Broccoli Soup, and this recipe was perfect--easy to prepare, thick, and delicious. Try serving the soup in individual heat-proof soup bowls, topped with generous portions of cheddar, and let the bowls sit under the broiler just until the cheese browns a bit. Worked great for me. Thanks for a fine recipe.***AMENDMENT: I just bought an immersion blender, and, believe me, it cut the prep time of this recipe in half!! No more slopping the hot broccoli into the blender. Take my advice--get yourself an immersion blender if you don't already have one; what a great appliance!

I thought this was rather bland until I added cayenne pepper. Next time I would also saute' some garlic with the onion. With the addition of the pepper, family thought this was great.

Every recipe I have tried for broccoli soup has been bland and watery, but this one is just what I was looking for. I used half and half and only 1/2 the onion suggested. Also, DO NOT omit the nutmeg. It makes the soup so much better! The taste is very similar to the broccoli soup served at Old Country Buffet. YUMMY!! If I could give it ten stars....... I would! Thanks William!

Very tasty! My texture didn't look very smoth. I think maybe the flower didn't blend in completely. It just didn't look like perfect creamy soup. But the taste is great!

This soup was terrible. I only used half the onion required...and still the onion flavour was very overpowering. The soup wasnt very creamy tasting and the celery seemed like it didnt belong. I needed alot of cheddar to make it taste good. I won't be making this again

This is a wonderful cream of broccoli soup! To make it lower in fat I used 1 ½ cups of 1% milk and eliminated the butter. To avoid lumps be sure to blend the flour with a bit of the broccoli water before adding it to the onions and celery. I also like a heartier soup so I doubled the amount of broccoli and celery. Very good and low in fat!

I am always going to stores to bring home some Cream of Broccoli soup. I always wanted to learn how to make it at home and have found the perfect recipe. Move over Emeril, boy is this great soup! I made it as an appetizer for Easter dinner and everyone loved it. It received lots of rave reviews and I will be making this at least twice a month. I did add more sharp cheddar and salt and pepper while it was cooking, and oh my, this is even better the second day..Thanks for the great recipe William!!

This recipe was delicious! I made a few changes, ommitting the milk and flour and substituting 1 cup cream. (low carb diet) And instead of dirtying the food processor I added some broccoli, used a hand blender, then added more chunks. As other reviewers suggested, I would add much more cheese next time. And one with lots of flavor, like a sharp cheddar.

Simple and delicious soup. I used half and half instead of whole milk and it was nice and creamy and I think anything less would of made this "runny". I also suggest taking your time and maybe preparing this an hour or so before the rest of dinner 'cause the flavors really settle in. Thanks so much and enjoy!

Easy and delicious. I only made one adjustment to "lighten" the fat content. I used 1% milk instead of whole and decreased the amount to 1.5 cups.

I doubled the recipe because I had so much broccoli ... this was my first try at cream of broccoli and I think this recipe is a good one. I did use bouillon cubes instead of the powder and I added celery salt and a bit of crushed red pepper at the end. This is good even without the cheese, and better the next day.

I found this a bit bland. I added a fair amount of sharp cheddar to each bowl as well as some to the soup to add some zing. Texture was good, but I prefer a 'cheesier' version.
