I loved this. So yummy. I had to stop myself from eating it while the oven heated up. Corn is a favorite of my hubby and daughter, so Im always looking for new (but easy) ways to serve it. Im glad I found this!

Pretty good recipe, but definitely needs a little sprucing up. I added some fried bacon and onions and added the entire can of green chilis. It was really good the next day. Not sure how often I'll use this, but it's definitely better than regular corn. Thanks!

This turned out very good- my son and I enjoyed it very much. I used a mexican corn blend with onions, peppers and spices and it was very tasty. I will definitely make this recipe again. Thanks!

Creamy, corny goodness. After reading another reviewer's suggestion of adding bacon, I just couldn't resist. I cooked up 3 slices and crumbled them into this. I also used neufatchel cheese, as that's what I had on hand. The bacon gave the whole dish a nice smokey flavor, but would have been just as yummy without. Thanks :)

This was really good. I doubled the recipe for leftovers and because I had a big bag of frozen corn. Defrosted the corn as others as said. It was a bit spicy for me but my hubby loved it. I added some shredded cheese on top for extra. Thanks~

So many ways to customize this recipe and it will still turn out wonderfully, so I gave it a 5 star rating. My own additions were white pepper, red cayenne pepper, tabasco, and grated sharp cheddar cheese. I also sauteed chopped onion and red bell pepper in bacon grease, and added that along with cubed ham to the mix. My only comment on the original recipe, is to steam or thaw the frozen corn before adding to the mix to allow for more even baking in the oven.

I was trying to find a corn casserole to serve along with our Christmas ham that did not have creamed corn in it (I'm not a big fan). This was great !! I took one reviewers advice and added a whole can of green chiles just to have a little more spice. Thank you for sharing -- we'll be making this quite often !!

Just like I remembered from when my sister made it years ago, I've been searching for the recipe. I double the above recipe and also I add half an onion and half a bell pepper, chopped, sauted in a hot skillet with EVOO to soften them, then mix them in before baking. Tastes great!

This is a great recipe!! Here in Texas, we add a few strips of crisped and drained bacon and chopped pickled jalapenos for more spice. This is what I call a "Man Pleaser" recipe. Everyone I know who has tasted it has LOVED it and always asks for the recipe.

I fixed this last night to serve with tacos and refried beans. My husband and I were impressed! I used SteamFresh frozen corn, 6 oz cream cheese, garlic powder, salt, pepper, and I added extra green chilis for more spice. Super easy. Spicy but sweet. Will be making again soon!
