Cream Cheese Cookies II

INGREDIENTS

  • 1 cup packed light brown sugar
  • 1 cup white sugar
  • 1 cup butter
  • 2 eggs
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1 (8 ounce) package cream cheese
  • 4 cups confectioners' sugar
  • 1 cup chopped pecans (optional)

DIRECTIONS

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cream together white and brown sugars, butter or margarine, eggs, baking soda, salt, and vanilla. Spoon in flour and mix well. Mix in 1 cup chopped pecans.
  3. Drop by teaspoon onto cookie sheets. Bake 8 to 10 minutes. Let cookies cool, then place filling on one cookie and put together like a sandwich.
  4. To Make Filling: Mix together cream cheese, confectioner's sugar and 1 cup chopped pecans (optional). Spread on cooled cookies.

These cookies did not need the cream cheese frosting at all - in fact, I thought it detracted from how good these cookies were. If this recipe were for the cookies alone, I would have given it 5 stars. I would recommend adding the baking soda to the flour before adding it to the mix, and I was slightly scared by how crumbly the mixture was, but with a little heat from my palms, it stuck together and turned out great. As my husband said, they taste like chocolate chip cookies without the chocolate chips. Thanks!

I love cream cheese so I decided to make these. The taste at first is odd but you get used to it and they actually are quite delicious. My family ate them all in one day!

Very easy to make with a fantastic chewy taste. I made these for Christmas and put red food coloring in the dough.
