Cream Cheese Apple Muffins

INGREDIENTS
1 (3 ounce) package cream cheese, softened
3/4 cup sugar
2 eggs
1/2 cup milk
1/4 cup butter or margarine, melted
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup peeled, diced tart apples
1/2 cup bran flakes cereal
TOPPING:
1 1/2 teaspoons sugar
1 teaspoon ground cinnamon

DIRECTIONS
In a mixing bowl, combine the cream cheese, sugar, eggs, milk, butter, lemon juice and vanilla; beat until smooth. Combine the flour, baking powder, baking soda and salt; stir into cream cheese mixture just until moistened. Fold in apples and bran flakes.
Fill greased or paper-lined muffin cups two-thirds full. Combine topping ingredients; sprinkle over batter. Bake at 375 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

This is a decent basic recipe. It leaves much to be desired though in flavor. I made the recipe to a tee, actually it makes more then 12, more like 16 large muffins. I suggest using self rising omitting the baking powder which is overwhelming in the taste, not a good thing. Also I believe it needs more sugar, and maybe a little cinnamon, or something else. It's just to blah, not terrible, which is why I gave it a 3, but definatly not great. Pouch BC muffin mixes are a 5 in flavor comparison.

I agree with the other reviewers who thought the muffins needed some spice. We added lots of cinnamon, some ginger and fresh nutmeg. We also added raisins and the muffins were quite tasty when warm from the oven. I also took the earlier advice and cut back the baking powder to 1 tsp. The yield was about 18 muffins from one batch.

These are amazing muffins! It has been three days since I made them, and they are still chewy and soo tasky! For cinnamon lovers: try putting a teaspoon of cinnamon in the dry ingredients. Mmm!!
