This is an extremely easy recipe - take it from me, a real cooking/baking beginner! I used a 20 oz. can of crushed pineapple, drained it into a container, and got about 1 cup of pineapple juice. I then added 1/4 cup water to make it according to the recipe. I also used about 3 cups of fresh cranberries, basically enough so that the whole bottom of the pan is covered with cranberries. This ensures that there's cranberries in every bite! I used a scoop or two less brown sugar than the recipe calls for.
This came out GREAT! I always read people writing in their reviews, "Even my picky kids liked it...", "My husband doesn't even like ___, but ate it all...", etc. This cliche phrase became true for me! My boyfriend doesn't even like pineapple and was complaining about me making a pineapple cake, but ended up eating half the cake in two days!
