This pie has lots and lots of pecan stirred into the filling. And it 's a basic recipe that takes kindly to adding extra ingredients, if you 're so inclined. Try chocolate or a jigger of Jack Daniels.

Cranberry Apple Pie I

To make this slightly tart, crunchy pie, apples and cranberries are tumbled au natural into a waiting crust, and just a bit of tapioca is added to absorb the juices. Then it 's topped with a brown sugar and butter streusel, and baked until the flavors and juices have mingled perfectly.

Mock Pecan Pie II

Poor Man's Pecan Pie

For this sweet and rich pie, rolled oats masquerade as pecans and no one is the wiser. Corn syrup, sugar, eggs and butter are stirred into the batter, and when it 's baked, the oats take on the texture and taste of those lovely nuts. Serve with lots of whipped cream.

This is one of my husband's favorite pies. I can also say that it is mine as well, and my children sure go for this one. This pie can be baked in small fluted foil pans to make 8 to 10 individual pies.

So easy and so good, you can 't go wrong with this treat. Sweetened cranberries are poured into a pie crust, topped with a layer of brown sugar and walnuts, and baked.
