INGREDIENTS
2 cups biscuit/baking mix
2 tablespoons sugar
2/3 cup milk
1 egg, beaten
2/3 cup jellied cranberry sauce
TOPPING:
1/2 cup chopped walnuts
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
GLAZE:
1 cup confectioners' sugar
2 tablespoons milk
1/4 teaspoon vanilla extract

DIRECTIONS
In a large bowl, combine the biscuit mix, sugar, milk and egg. Pour into a greased 8-in. square baking dish. Drop cranberry sauce by teaspoonfuls over batter. Combine topping ingredients; sprinkle over cranberry sauce. Bake at 400 degrees F for 18-23 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
In a small bowl, combine the glaze ingredients; drizzle over coffee cake.

This is a great recipe to use up that leftover can of cranberry sauce. My family loved it so much it's become a holiday staple!

This cake was a dry the first day I served it...so much that I wasn't interested in having another piece. But, my sweet tooth got the best of me and I had a piece several days later. By then, it was moist and I couldn't stop eating it. Any ideas on how to make it moist from the start?

This is a delicious coffee cake. I did not have walnuts, I used pecans instead. My husband loved it too! He is really picky.
