We liked this recipe very much. As suggested, I doubled the cornbread, I added a can of partly drained tomatoes and threw in a couple of handfuls of frozen corn. I think it could have used the cheese (which I didn't have), and my son wished it were spicier. But we all enjoyed it very much. And it was super-quick to prepare after a long day at work.

I had to double the cornbread to cover the dish. I also added the jalapenos & corn as some others suggested. Very nice meal. My teenaged son LOVED it.

This recipe just seemed too sweet to me and my husband. Maybe adding some jalapenos or hot sauce would have given it a nice kick.

This was a very simple, and fast! Only took me about 30-40 minutes to make! I used ground turkey, seasoned with back pepper, one red pepper, 1/2 of an onion, one fresh tomato, 1/2 can of corn, baked beans & the fajita seasonings. I put a thin layer of mexican style shredded cheese between the meat and cornbread layer. I will try the southwest seasonings next time. Thank you for this very simple and yummy recipe!

This was the easiest recipe - and DELICIOUS! My entire family liked it (even the pickiest 7 year old!). I added a cup of frozen corn and a can of diced tomatoes to the meat mixture and a handful of grated cheese to the top, before I spread the cornbread. I topped it off with sour cream and diced jalepenos when it came out of the oven.

This is one of my husband's favorites! If you want to make an easy recipe even easier, double the meat mixture and freeze for later use. The next time you serve it, thaw it out, and the dish prepares in a snap!

This was pretty good...I made some changes including putting a thin layer of mashed potatoes on the bottom and adding cheese both on top of the meat mixture and in the cornbread. I also put a can of diced tomatoes and a can of corn (drained) into the meat mixture. I baked it in a 11.5 X 8 pan which was probably too big since the cornbread layer was a little thin.

I'm always a little skeptical about cassaroles like this, but it made a enough for four large servings, was pretty easy and tasted pretty good. I beefed up the meat mixture with a can of diced tomatoes with chilis and some chopped celery. I was going to add some boiled potatoes, but there was no room! The cornbread layer was good but could have been a little thicker. Next time, I would try a larger package of cornbread mix, but not too big so it would overflow. The boiled potatoes went on their own with some leftover cauliflower and a parmesan cheese sauce. It made for a filling, tasty meal.

Quick and pretty good. Used pinto beans, 1/3 cup ketchup, 2 cloves chopped garlic, half can of mexi-corn, and one chopped chipotle pepper in adobe. Didn't have red peppers. I meant to add cheese before applying the cornbread but forgot. It was still good. Next time tryin' cheese . . .

I call this "Sheperd's Pie with a twist." I read all of the reviews. I thought this was pretty good. Husband loved it. I used 3/4 of a red pepper, chopped about 7 slices of jalapeno's, added a can of diced tomoatoes and a a handful of corn(frozen). I added the jalapeno's, corn and tomatoes to the meat. I only used 1/2 of a package of fajita seasoning. I will make this again. Easy and good despite the unique combination of ingredients.

This was really good and was enjoyed by everyone in the family. I followed the some of the suggestions given by others and added corn and also used 1 can of fajita pinto beans instead. Plus I used chipotle pepper seasoning instead of the fajita seasoning since dry fajita seasoning is not available at my local grocery.
