Awesome. They look hard but it's really not and whatever work you put into it, is definately worth it. I added a little sour cream to mix just because I had it on hand. I'm sure it would have been really good without it too.

I added the frozen corn and it cooled it right off. Next time I'll warm it in the pan with the butter, then add the drained potatoes. I only cut the ends of the jalapeno and tossed it in with the 4 whole cloves of garlic - may use more of both next time! These are so yummy, I admit I was hesitant, but with so many good reviews, had to try it for myself. I forgot to add the cheese when I tasted it, so mixed it in later. Yum, yum, yum!!! Thanks for such a great recipe!

First, I forgot to print this off and did it by memory, so my version was different--I added some small onions, used more garlic than required, didn't have a jalapeno (used a couple pinches of cayenne) used canned corn and used skim milk instead of butter. I didn't do this to try to improve the recipe, but because I didn't have it with me. Anyway, we all loved the results. I ate some cold out of the fridge later that night I liked it so well. Great recipe--probably even better when you do it right.

So good! I only used red potato's because that's what I had on hand. I also added some bouillon cubes when boiling the potato's. I would definitely make this again.

This was a nice change from ordinary mashed potatoes. I omitted the jalapeno pepper, since I have a 3 year old who doesn't like spicy things, and the cheese. Tasted great with country gravy!

This was really tasty and I love everything "cowboy"!. I don't know if I can fairly rate this recipe as I omitted the garlic and jalapeno. I also added green peas and sour cream. Next time, I wont put cheese in. I agree with the reviewer above: it ruins the texture. This is a keeper for it's simplicity and taste. Thanks

I made this for dinner tonight and in the end, we thought it was just ok. I used baby white potatoes only, and apart from that, followed the directions exactly. We could not taste the garlic, jalapeno or carrots (these were primarily for colour). So next time I make them, I will add more garlic and add the carrots for the last half of the cooking time.

I love these potatoes! The corn and carrots add some extra flavor and texture and allow it so that you don't need to add anything else (except maybe a little salt) to have a very flavorful side dish!

Excellent potatoes and very simple. I left the skins on. You don't even need to make a seperate vegetable with these potatoes.

I used turkey bacon, left out the corn and added minced garlic to the water. i left the skins on the potatoes also. Hubby loved it and ate the leftovers for a few days... A great way to sneak in extra veggies

These were great! I used Fat Free Margarine and Fat Free shredded Cheddar/Mozzarella mixture to make it fit Weight Watchers Core plan. It was an awesome way to incorporate veggies. I'm even thinking of adding chopped canadian bacon next time for some added flavor, while sticking to the Core Plan!
