What an amazing recipe! It took almost no time to make (and when I have to work late, that is a huge plus) and was a whole meal in itself! I served it over parmesan couscous and I made quite a bit hoping for left overs to make my lunch tomorrow. By the time I got finished eating my dinner, the pot was scraped clean. My family told me that it was the best chicken they've ever had!
I marinated the chicken in lemon, a touch of olive oil, salt and pepper and I cut the pockets into the chicken. I skipped the bouillon cube and just used chicken broth. It was so simple, so cheap, and so fresh tasting!
