This was very nice, however next time I think I will use small peppers and serve it as a side dish instead of making it a main meal.

I made this for some friends and we really enjoyed it. It turned out to be very filling, but I had made extra filling and spread it on the pan so it would keep warm in the oven, prevent the peppers from falling over and look pretty :) and we ended up eating almost all of it. I had used 1.5 cup uncooked couscous and there was enough for leftovers for one person. I also bought one green, one yellow and one red pepper so we each got to choose our pepper color. :) We are vegetarians, so I used vegetable stock instead of chicken broth. I would recommend looking at the cooking direction for your specific couscous because the couscous I use recommends 1 c liquid to 1/2 c couscous, so I had to add more broth.

I used green peppers instead of the sweet red peppers and omitted the apple, raisins and pine nuts just because of personal taste. My husband did not like the texture of the couscous but I thought that everything tasted great. Next time I am going to try rice instead and add more mushrooms.

Really tasty. I didn't have pine nuts or celery, but the couscous was still delicious. The red pepper...didn't do it for me. I actually put some roasted red pepper hummus I made from another recipe on this site on the side and that cut the sweetness from the pepper that held the couscous. Still 5 stars for sure. Loved the apple and raisins.

I'm quite pleased with the way this recipe turned out. I left out the garlic (husband is allergic,) turmeric, and substituted raisins with dried cranberries and the couscous was still very flavorful. I noticed that some of the other reviewers remarked that there was too much stuffing- I had the opposite problem since I was using monster organic bell peppers. I'll definitely make this recipe again and double the couscous since it was so delicious that we wanted seconds.

I thought these were delicious. I omitted the apple and raisins, because I'm just not a fan of fruity flavors in dinner meals. Had it with brussel sprouts and was surprised at how full I felt after just one.
