Country Potato Pancakes

INGREDIENTS

  • 3 large potatoes, peeled
  • 2 eggs, slightly beaten
  • 1 tablespoon grated onion
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • vegetable oil

DIRECTIONS

  1. Finely grate potatoes. Drain any liquid. Add eggs, onion, flour, salt and baking powder. In a frying pan, add oil to the depth of 1/8 in.; heat over medium-high (375 degrees F). Drop batter by heaping tablespoonfuls in hot oil. Flatten to form patties. Fry until golden brown then turn and cook other side. Serve immediately.

I really enjoyed this recipe. I tried using a slightly thawed half bag of frozen hashbrowns because the grating and draining got a little messy and it worked great!

Love this recipe!! I only drizzled my pan with oil each time(do NOT need to cook them with so much oil!!). Both my daughters gobbled them up!!

I enjoy these most with a bit of salty butter or just plain salt sprinkled on them - whichever tickles your fancy. A lovely way to spicen up your everyday potatoes!
