INGREDIENTS
HERB SAUCE:
1/4 cup olive oil
8 ounces fresh mushrooms, chopped
1 large onion, finely chopped
1 garlic clove, minced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 teaspoon salt
1/8 teaspoon pepper
2 teaspoons sugar
1 cup water
1 bay leaf
2 tablespoons chopped fresh basil
MEAT LOAF:
2 pounds ground beef or combination of ground beef, pork and veal
1 cup seasoned dry bread crumbs
3 tablespoons milk
2 eggs, beaten

DIRECTIONS
In a skillet, heat oil on high. Saute the mushrooms; onion and garlic. Add tomatoes, tomato paste, salt, pepper and sugar. Remove 1-1/2 cups. Add water, bay leaf and basil to skillet. Simmer, uncovered, for 45 minutes, stirring occasionally.
Meanwhile, combine all meat loaf ingredients with 1-1/2 cups reserved sauce. press into a 9-in. x 5-in.x 3-in. loaf pan lined with waxed paper. Unmold onto a roasting pan. Bake at 350 degrees F for 45 minutes. Remove from oven; drain. Spread 1/2 cup of herb sauce over top of meat loaf. Return to oven for 15 minutes. Discard bay leaf and serve remaining sauce over individual servings.

This is excellent! The meatloaf is not over-powered by the ingredients. I did use the beef/veal/pork combination and made no changes to the recipe and would not make any in the future after having tasted it.

Ok- this was so not good. I thought for sure I was making a homerun dinner and we threw away half the loaf! This is a family that lives on meatloaf. I was really dissapointed. It was way too tomato-y for us.

I have used this website for about a year, but this is my first review. I live in upstate N.Y. and we are having a snow storm, so I needed to make this with what I had on hand. First of all, I used 2lbs. Of venison burger (thanks to my hunter hubby). I also didn’t have crushed tomatoes so I used two small cans of whole tomatoes, but I popped them in my magic bullet for a couple of seconds to make them mushy. I used minced garlic from the jar instead of a clove (½ tsp.). I also used 1 Tbl. Spoon of dried basil since I didn’t have fresh. It was plenty to flavor it. I omitted the milk, since we were out and I couldn’t get to the store. It still came out perfect! I grated up a little cheese to sprinkle on top when I plated it. I think I will make it like this every time because it was that yummy. My husband and three year old loved it.

My hubby had to work on a Sunday and he called around begging me to make a meatloaf- but I don't cook! I checked around and decided to try this one. This was a great recipe! It doesn't look as easy as the others and to be honest there was quite a bit of prep- at least for a non-cook like myself. The only things I did differently was to add more garlic (4 medium cloves, we love garlic) and omit the tomato paste. I also let it bake for an hour covered (recipe doesn't specify either way- covered? uncovered?) and then 15 minutes uncovered with the mixture on top. It was moist and very very tasty! Thanks for making me look so good- and for ending my hubby's dismal Sunday on a great note!

I was looking for a great recipe that didn't use ketchup (high fructose corn syrup) and I found this perfect recipe! It makes extra sauce which will be great for pasta tomorrow since there is just a tad bit of meatloaf leftover. Very moist, extremely flavorful and I even omitted the garlic and onions since I can't eat those while breastfeeding. I have already forwarded this recipe on to friends. Highly recommend everyone try this one!

My father-in-law is one of the hardest people I know to please when it comes to dinner or food in general. I stumbled onto this recipe and decided to try it out. For the first time in the 9 years that I've cooked for him, he didn't say one negative thing about it! AMAZING!! It really is a delicious recipe!
