INGREDIENTS
2 cups all-purpose flour
1/3 cup whole wheat flour
1/3 cup quick-cooking oats
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 1/4 cups buttermilk
2 eggs, lightly beaten
2 tablespoons vegetable oil
1 cup fresh or frozen blueberries
CRUNCHY TOPPING:
1/2 cup quick-cooking oats
1/4 cup chopped slivered almonds
1/4 cup packed brown sugar
1 teaspoon ground cinnamon

DIRECTIONS
In a mixing bowl, combine flours, oats, sugar, baking powder, baking soda, salt and cinnamon. Combine buttermilk, eggs and oil; stir into dry ingredients just until blended. Fold in blueberries if desired. Combine topping ingredients; sprinkle about 1 teaspoon for each pancake onto a lightly greased hot griddle; pour 1/4 cup of batter over topping. Immediately sprinkle with another teaspoonful of topping; turn when bubbles form on top of pancake. Cook until second side is golden brown.

These pancakes are really quite good. My husband and I really liked them. We ate them with butter and maple syrup on top.

I wanted to make something a little extra special for my kids, and having all but the blue berries, I decided to make this for them. These were great! Really good flavor and nice and filling. I'm going to keep frozen blue berries on hand for the next time I make these, as I'm sure they'd be even better.

Unbelievable! These were so good. Mine turned out huge and very thick. It was like a cinnimon roll or bread. So good I might never go back to traditional pancakes. Thanks for the recipe

I made these pancakes for my four kids and they loved them! I didn't have blueberries so just made them without. They taste more like a cinnamon roll than pancake. Have your batter ready once you sprinkle the topping on the pan, because it will burn (or maybe I had the heat up too high?) I'd make them again for a Sunday Breakfast.

I've made these several times, they are a family favorite! I do no put the topping down first, I couldn't get the pancakes to cook without burning the brown sugar. I let them cook good on the first side, sprinkle a generous amount of the topping and flip. They are so moist and sweet you don't need any butter or syrup on top.

Just fixed these for breakfast and they were a big hit with hubby and the kids! I substituted 2% milk with a little over 2 tblsp vinegar for the buttermilk. Not something I would fix everyday, very sweet, but it made Sunday breakfast extra special!

This recipe was great. I made exactly as written, except I cut it in half (I'm just cooking for me and my husband). It had great flavor, and the oats topping really added a crunchy sweetness.. I'll definately be making again.
