I scaled this down to three servings and followed the instructions, I added a little more onion then called for and didn't use the almonds on top. The flavor of these are good, its the texture of the cottage cheese mixed in with the creamy potato that's throwing me. If it was based on flavor only I would definitely use this again, but I won't make this again just because the texture is disagreeing with me.

I skipped the almonds because I didn't have any; however, the recipe was very easy to make and it turned out great. My hubby did question "the white stuff" aka cottage cheese but he ate it all and had seconds which is always a sign of "this is good!" I can't wait to try it with the almonds as well. Thanks for a great recipe.

This was very good- I did drain the cottage cheese because it looked like it would be too wet. I also cooked the onion in a small amount of butter before I added it to the potatoes.

These potatoes were awesome. I added a little bit of smoked Gouda (maybe 1/4 c.) because I wanted to use it up. And I left out the onion because I didn't have it, although if I did have it I'd put it in because I think it would be good in there. Simply scrumptious and so easy! Highly recommended.
