Amish Custard Cottage Cheese Pie

A hint of lemon and lots of cottage cheese adds a delightful twist to this easy-to-make, light custard pie. Use a graham cracker crust or a pastry crust -either tastes wonderful. The flavors mellow if you give it a day. Try adding chocolate curls on top.

This pie has a lighter flavor than a traditional cream cheese one, and there are raisins and nuts that give the cottage cheese a wonderful texture. It bakes up brown and beautiful. Top it with fresh blueberries or strawberries.

This pie 's filling is made with evaporated milk so it 's very creamy, and the whipped egg whites folded in at the last minute make it light and airy. A bit of fresh lemon juice adds a refreshing taste to the finished pie. Decorate the top with sliced kiwi and strawberries. This recipe makes two 9-inch pies.

Cream cheese is sweetened and whipped until fluffy. Then eggs, melted chocolate, coffee, and frozen whipped topping are stirred in. This mocha and cream cheese filling is poured into a pie shell, baked and then chilled before serving.

To make this pie 's creamy, delicately-flavored filling, combine eggs, ricotta, milk, vanilla, sugar and cornstarch, and then pour it into a prepared crust. Bake the pie for an hour until it 's set. Serve with sweetened, sliced strawberries.

Pineapple Cream Cheese Pie

This is a make-ahead, multi-layered pie that is better on the second day than the first. The first layer is a sweet, cooked pineapple filling that is spread onto a prepared pie shell. The second is a whipped, cream cheese filling. Alternate the layers and the pie is ready to pop into the oven to bake. Chill and serve with whipped cream.

Rich Cream Cheese Pecan Pie

The vanilla-flavored cream cheese layer is stirred up and spread over the bottom of a prepared deep-dish pie crust. Pecan halves are arranged on top, and then a sweet, thick mixture of corn syrup and chocolate is carefully poured over that. The pie is baked until set and served at room temperature.
