I came across this recipe while looking for a way to use up some cottage cheese. Having read previous reviews about this meatloaf being too bland, I added some thyme and marjoram to the mix. I also cooked the onions in a little oil and added the tomato ketchup and a little Worcestershire sauce before adding to the rest of the ingredients, and I substituted turkey for ground beef to make it a little healthier. The results were good - I was unsure about the Parmesan topping but in fact it tasted great. My husband loved it and it had an even better flavor the next day. I would recommend making this, and I will make it again, but with the additions to improve the flavor. There is a lot of room for creativity with this recipe.

Edible but very bland - that after I added 1 t of garlic powder. I used 2 T dry onions rather than fresh and added some chopped celery for texture. But - my 18 month old loved it. We will not be amking this agin - though I might try cottage cheese in another loaf.

My family really enjoyed this meatloaf. The bonus being faster cook time because of baking in the 8x8 pan instead of a loaf pan. Great idea! I did modify, using 3/4 tsp garlic salt instead of the 1 tsp salt. Thanks for the recipe, we will definitely use it again.

Moist for sure, but does not have much flavor. Very surprised, it sounded so good, but it's lacking. Husband didn't care for it and he normally loves meatloaf. I'll keep the idea of cottage cheese, thanks for that!!
