Everyone really seemed to like these. I realized after I started that I only had flour tortillas. I used them but they did seem to fall apart. Don't know if the corn would work better...will try that next time.~~~UPDATE~~~I tried this agan and used corn tortillas this time. I actually liked them better with the flour ones!! The corn ones were way too small to roll well and they kept busting apart ((even after warming them)) I will use this recipe again but using the flour tortillas!!

I have made this dish twice now and the reaction is lick the plate delish. My co-workers all wanted the recepie and my boyfriend invites his friends to eat when I make it. Yes, it is that good!

These were very tasty! I loved the creamy part that the cottage cheese added. I did take the advice of add 1/2 cup sauce to bottom of pan, I also used flour tortillas. My whole family LOVED these and has requested I make these again. I think next time I will try making layered instead of rolled and see how that goes!**UPDATE** didn't layer them but tried green chile enchilada sauce-LOVED IT...that change allowed the green chile flavor to come out...SUPER-Changed to 5 Stars

This is a great recipe with a few changes. I used leftover rotissiere chicken instead of chicken breasts. Because rotissiere chicken tends to be a little salty I was afraid to add the taco seasoning. I added a tsp of cumin to the cottage cheese/sour cream mixture instead. I used green enchilada sauce since we had that on hand (and I really prefer green sauce). I served it with charro beans and it was fabulous. The filling stayed moist and had lots of flavor. Definitely will make this again.

These are really good. I left out the green chiles, (can't eat them), and substituted cheddar for montery jack, (couldn't find any at the store), and flour tortillas for the corn tortillas, (don't like them). I will definitely make these again!

they were better than restaurant enchiladas which can be kind of mushy- i topped it with chopped green onion and sliced black olives for a nice look and then served with sour cream mixed with chopped cilantro--with the cottage cheese mix you can use less grated cheddar and so healthier too

This recipe was great. My husband cringed when he saw he cottage cheese, but he loved them. I added fresh chopped plum tomatoes, black olives, and scallions to the top before I baked them. I thought it added a good touch.

This recipe helped me re-invent some left-overs! I used left-over pot roast in place of the chicken...it was fabulous. I can't wait to try this as-written, with chicken. I was also short on time so I layered the items like a lasagna...and it worked out fine.

Delish! The only thing I did differently was that I stacked it like a casserole instead of taking the time to roll the tortillas and I used shredded cheddar b/c it was all I had....we loved it!

WOW! I don't care much about Mexican food, but my fiance loves it. So I figured, "ok, let's do an average recipe, and get - as usual - mixed results" (him liking it and me thinking it was just ok). SO WRONG! This recipe is FANTASTIC! Flavourful, delicious, wonderfully balanced. The cottage cheese is a great idea, with the sour cream and salt tasted a lot like feta cheese, but with less fat and calories! I used parmesan cheese on top and, as a couldn't bear to use a canned salsa, made the Red enchilada sauce from this site. A little time consuming, but totally worth it! Now, sign me up for more of this, please!

this was really yummy and good. i didn't have any chicken on hand so i used ground turkey, and it turned out great. i didn't have any chopped green chilies, but i did have a can of rotelle, so i used about 1/2 the can in the meat mixture. that gave it a nice flavor of chilies with the added tomatoes also. i will definitely make these again... next time with chicken, i believe, but it would be good with any meat.

I have made this several times and everyone loves it! I add 1 10 oz package of chopped spinach to add a little more veggies. I also think that they taste MUCH better if you use the "regular" taco mix than the chicken taco mix.

REDICULOUS!!! this was sooo good and so easy!! I'll have to warm up my corn tortila a bit more next time...but, YUM! I used the Red Enchiladas sauce with this - excellent - just let it simmer for a while until it reduces to desired thickness...

This was an amazing recipe!! A huge hit with my roommate and I was very surprised how easy and downright yummy it was! Perfect comfort food for a chilly evening. Even better the next day for breakfast! The only thing I did differently was omit the salt from the cheese mixture as I find the cheese, chicken and taco seasoning packets plenty salty in combination, and I used flour tortillas rather than corn. I will definitly make this recipe again!

Yum! I used 2 cans of enchilada sauce. 1 mild and one hot so my husband and I could have a happy medium. Delicious! I also substituted taco seasoning for what I had, pinch of chili powder with a little minced garlic.
