Lightweight & easy on my stomach. I used taco sauce instead of enchilada sauce. I doubled everything because it's a huge hit!

WOW - everyone went back for seconds and raved about it! Super easy to make. Only modifications were - I slow cooked the chicken in a crockpot with enchilada sauce and I layered the recipe lasagna style. This is a keeper! Thanks annabell

I use cream cheese in place of the sour cream, and when I really feel lazy, i just shred up a store-bought rotisserie chicken.

i was lazy and used can chicken instead (the only alteration). it was still incredable!!! im sure it will be even better when i use REAL shredded chicken!

Tasty-good alternative to the heavy cheese in a standard enchilada. I added a can of black beans to the chicken and used low fat cottage cheese and sour cream. Also flour tortillas becasue that's what I had. For sauce I use Emril's recipe as a steandard.

fussy husband liked this. i used some shortcuts on prep and clean up time to make this work day friendly. mostly saved time by taking a long sheet of aluminum foil, layed it flat on the table to butter it (butter thoroughly) then line the pan with it (saves scrubbing your dish). for the chicken I used great value chicken strips, the breaded precooked kind, actually the breading held the taco flavor Very well. fried it in smart balance butter along with green peppers. (just thaw in microwave and 'fork' it.) also saved time by simply stirring the shredded cheese into the cottage cheese to spoon in all together. we love salsa, so i put one spoon of salsa in each little roll. (note: hot taco seasoning with 'medium' salsa IS a bit Too hot.) he really liked this, so next time when I make it I will adjust the ratio a bit to have more sour cream in these. (also, I used both fat free cottage cheese and light sour cream, he loved it.) also i used the powdered mix enchilada sauce, which was bland, but i added taco seasoning to the bland sauce before mixing everything else. it all came together well, and fairly quickly.....

Delicious! I made this for company and everyone went back for seconds. I spread some enchilada sauce on the bottom and swirled each warm tortilla around in it before putting the goodies in, which kept the dish moist. Wonderful and easy recipe!

This was very good. I rolled the torillas in the enchilada sauce, used green enichilad sauce since i didn't have red. then followed the recipe but i did sautee the onions and chilles before adding chicken and taco seasoning. Next time I will use less salt because I did have to add more cottage cheese to the mix because it was way too salty (maybe I shouldn't of tasted it) :) I'd say 22-25 minutes to cook is good. I'm glad I checked mine otherwise they would have been dry and too crispy. Otherwise, super easy and very tasty!!

We all enjoyed this recipe. The cottage cheese adds a nice flavor to this. Please dont use taco seasoning packets to get a mexican flavor. Just saute a small onion, 2 cloves garlic and your protein (grnd beef, chkn, etc). Add 2 Tbl of Cumin, Oregano, 1 small can of tomato sauce and little water. Simmer just like it was a packet of seasoning. You will dig it.

With a few changes, this was fast, easy and 5 stars! 1. I used a rotisserie chicken and shredded the breasts. 2. Used fat free sour cream & 2% small curd cottage cheese. 3. Added a few chopped jalapenos from a can & scallions into the chix mix on the stove. 4. mixed cheese mixture & chix mixture together before spooning into warmed 6" flour tortillas (like another reviewer suggested, small pan on medium & warm tortillas 15-20 sec. on each side). 5. Sprinkled with shredded cheese, rolled tortillas. I didn't want to use all of the leftover chix mixture on top so I spread only a little down the center (plenty leftover for another day). Topped with 1 can of red enchilada sauce then sprinkled the rest of the shredded cheese. Each serving was plated over some lettuce, topped with a dollop of sour cream, guacamole, sprinkled with scallions & fresh parsley. Perfect! Thank you Annabell for a great recipe!

My whole Family loved these, I even have 1 child who does not like cottage cheese and he liked these. They are easy to make. I used the green enchilada sauce instead of red (I didn't know if the red was spicy) and they were excellent.

My favorite *no fuss* enchilada recipe - fairly healthy too. I always double and bring to friends who've had babies, friends that are sick, etc. It's too easy not to double the recipe and share. We love this!

This recipe is really amazing! I wouldn't change a thing about except to say that it just barely could feed 6...more like 4. After making it the first time I doubled the entire recipe so that we could have leftovers!! Super yummy...my husband was quite impressed. I leave the onions out though because I don't like onions. Also, I accidentally bought the green enchilada sauce the last time I made this and it was good as well...maybe even better than the red sauce, but both are good.

MAN these were good!! I didn't change a thing. My boyfriend, who can be a picky eater, absolutely loved them! I now make them almost every week. Great recipe and pretty easy.
