I loved this! The cottage cheese sour cream mixture adds a nice creaminess to the dish and really you could almost completely eliminate the other cheese if you wanted, making it a very lowfat dish. I used green enchilada sauce and just warmed the cooked chicken in it until it was shreddable. I did roll it into tortillas, but they pretty much fell apart. Next time I would make as a casserole - layer pieces of tortillas with the other ingredients. It really was yummy, and quite easy to put together.

this was my first attempt at enchiladas and it wasn't complicated at all ;) i think next time i'm going to use bigger corn shells if i can find them and make extra meat mix. i only had enough for 10 shells and no extra on the top which sounded good to me.. otherwise, easy and tasty ;)

Made my husband (and his whole dealership) crazy over these! YUMMY! I put frozen chicken breasts in the crock pot with the chopped onion, fresh jalepeno, green chilis, fresh garlic, a few TBSP of tomato sauce. Shred after five hours and then use the taco seasoning in a separate pan. Followed the rest of the instructions pretty much completely. Love them!

I used canned chicken because I was running low on time. It turned out great. The corn tortillas make a huge difference, very good. I think I will try with ground beef next time.

I would never have thought this would work, but oh my it does. I added a sprinkle of cheese in each tortilla along with the ricotta and it made a delightfully, creamy filling. I used a homemade enchilada sauce, and the secret there is to add a tsp or two of dutch cocoa powder, yum yum. Delicious.

This is SO good! I added some things, like kidney beans, corn and tomatoes, but these were the best enchiladas I have ever had-and I have had a lot of enchiladas!

"Authentic" or not, these were delicious! I was a bit hesistant to try (cottage cheese in enchiladas???) but am so glad I did. Everyone, including my 2 year old, enjoyed this. I highly, highly recommend another reviewer's suggestion to cook the chicken in the crockpot. I'll post again because I swear these might not have been as delicious without this recommendation: put frozen chicken breasts in crockpot, add diced onion, 1/2 a beer, sprinkle of cumin, oregano, black pepper, garlic cloves and cook on low 5 hours. The chicken was so moist and flavorful.

Not what I would call authentic, but they were so good I didn't care! Rated the recipe 4 stars as written, but 5 with changes that I made. I added black beans and corn to the meat mixture and used enchilada sauce and salsa instead of taco seasoning. I'm excited to try it again with verde sauce!

SO GOOD, MY TEN YEAR OLD EVEN LOVED THEM! (AND SHE DOESN'T LIKE ENCHILADAS). Made exactly as the recipe states, they tasted very "authentic" versus the canned soup versions I have made in the past. I froze half and cooked half. The frozen ones were just as good, if not better, three weeks later. Oh yes, be sure to use the 19 oz enchilada sauce, and pour it on!

WOW - everyone went back for seconds and raved about it! Super easy to make. Only modifications were - I slow cooked the chicken in a crockpot with enchilada sauce and I layered the recipe lasagna style. This is a keeper! Thanks annabell
