just made a half recipe of these after coming home from a trip to disneyland longing for the delicious beignets we had there.
these came out perfectly after only refrigerating for 15 minutes and rolling them out. i made them slightly thicker than the recipe said, cut them out, and then let them sit on the warm counter for 20 minutes before frying.
everyone in the family gobbled them down and sat about moaning about how good they were.
other changes:
i used half cake flour, half all purpose.
i added a bit of vanilla extract.
i used butter instead of shortening.
