I agree the texture is a bit odd, but the sweetness the corn adds is wonderful. If you like your eggs moist you will love this recipe.

This had a very good flavor but is very odd textured. It stays very wet. I absolutely love corn and eggs...but I am not sure the two belong together. If you want to try something different, try it. It is odd but good. I did spice mine up a little by pulverizing about 6 jalapeno slices and mixing in.
