Cooked cornmeal is chilled overnight and then fried until golden brown. 

Raisin Sauce

This sweet, yet tangy sauce is a nice complement to ham, or other meats. Raisins are simmered with brown sugar, dry mustard and vinegar. 

Seasoned Rice

Basmati rice is heated with soy margarine, nutritional yeast, garlic and basil to create a light, flavorful side to accompany any meal. Stir in a cup of your favorite steamed vegetable, if desired.

This is a recipe from a cafe in Santa Fe, New Mexico. They are good with maple syrup or, if you're ambitious, with homemade peach or raspberry spread. This recipe serves four people, fewer if they're very hungry. 

Jo's Mountain Mush

A jumbled, filling breakfast created when I was camping in Montana. Originally the hot dogs were roasted over a fire while the potato pieces were foil wrapped and roasted in the embers and then added into a pan of beans. However, it works equally well when cooked in a kitchen! Serve with crusty bread on the side and fresh shredded cheese on top.

Gosh these sound healthy and good. Soy milk is mixed in with whole wheat flour and cornmeal to make this wonderful batter. Pour onto a hot griddle or pan and cook each side until golden. Douse with maple syrup or the blackberry syrup above.

Very refreshing, fruity and delicious! These muffins will bring a smile to anyone's day! Share them with someone you love. You may substitute raspberries or blueberries for the strawberries if you wish and feel free to use either naturally flavored strawberry, banana, or vanilla yogurt.
