I do a similar recipe. But, I blend in Panko breadcrumbs (or use Panko alone - gives a nice texture.) The fish is baked at 450 degrees for 10 -12 minutes. The fish is served with a jarred fruit salsa (peach, mango or pineapple). That keeps it easy and fast to prep.

came out great...patted the fish dry as suggested and it helped! It was the first time I'd fried fish, but this was a great recipe to start with.

i made this as the recipe stated. i'm southern and used to good catfish. i have my own recipes for it but thought i'd branch out with something new. this is good but certainly needs more heat, lemon pepper and hot sauce in the batter. still a very good recipe.

I oven-fried -- my batter ended up slightly soggy. Not sure if I sprayed too much or too little. The cornmeal adds a nice crunch on its own anyway! Got a subtle but nice kick with 3/4 tsp cayenne instead of the 1 tsp Cajun seasoning. Will use again!
