"THIS IS a perfect main dish when you're cooking for two. I've even used these hens as a stand-in for turkey on Thanksgiving Day when the group was not large. INGREDIENTS
1 1/3 cups chicken broth
1/2 cup uncooked long grain rice
1/2 cup sliced fresh mushrooms
1/4 cup chopped celery
2 tablespoons chopped onion
1/2 teaspoon dried marjoram, divided
1/2 teaspoon salt, divided
2 (1 1/4 pound) Cornish hens
1 tablespoon vegetable oil
pepper to taste

DIRECTIONS
In an ungreased 9-in. square baking dish, combine broth, rice, mushrooms, celery, onion, 1/4 teaspoon marjoram and 1/4 teaspoon salt. Place hens on rice mixture and brush with oil. Sprinkle with pepper and remaining marjoram and salt. Cover and bake at 350 degrees F for 1 hour. Uncover and bake 25-35 minutes longer or until juices run clear.

This was fantastic. I didn't follow the proportions of vegetables, rice, and stock exactly, so the rice was a little mushy, but there was plenty of flavor! I had to cook my cornish hens an extra 20 minutes. They turned out juicy, not dry. I'll definitely make this again and probably for company.

i used this recipe for our valentine's celebration & my bf loved it!! he especially loved da rice as did i. my bf only had one suggestion next time i cook to add more salt & spices.

The cornish hen came out very moist and flavorful. It was nice to have the rice and vegetables as a side dish. The house smelled nice as it was cooking.

I really wanted to like this recipe, but for my husband and myself, it was bland. No flavor. Zip. We ended up adding a ton of spices to liven it up.
