4 Cornish game hens
2 limes, halved
2 teaspoons olive oil
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
kosher salt to taste
ground black pepper to taste

DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
Rub each hen with a lime half. Drizzle the hens with olive oil, and season with chili powder, cumin, kosher salt, and pepper. Place hens on a rack in a shallow roasting pan.
Roast hens 15 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and continue roasting 30 minutes, or to an internal temperature of 180 degrees F (80 degrees C).

This recipe was the easiest chicken recipe I ever made! I was looking for something quick to prepare but low on ingredients, and this met both requirements. It's wonderfully moist and spicy and we loved it!

This was better than the other recipe that I made but it still wasn't that great. Flavor wasn't throughout the hen. Took longer to cook as well. Won't be making again.

This was ok. DH wasn't impressed. It did come out juicy and tender, and the skin was crispy and flavorful, however the flavor did not carry into the meat. The cooking time was 45 minutes longer than what was stated, be wary if you are timing sides to be complete at the same time! We were done the baked potatoes 1/2 hr. before the chicken was done!!

Really good! Made this for my husband and he loved it....only made 2 hens and used the same amount of spices....the skin was yummy!
