This was one of the best recipes I have used for Cornish Hens...I reduced the amount of garlic, just a personal preference, otherwise I followed the recipe exactly and it was wonderful. I got rave revues from family and dinner guests. The hens were very moist and very flavourful. Thank you for a great and simple recipe

Following tips from various websites I also soaked the hens in salt water brine for 1 hour+. Rubbed butter, herbed and orange zest under skin. Put juice of 1/2 orange and orange slice in cavity. I made a rub of cinnamin, b sugar, nutmeg, allspice to dust them with. Result was sweet and rosamary herby.

I had never prepared cornish game hens before and wanted to create a dish that had the "wow factor". I did double the sauce recipe as others suggested. This was a huge hit and has instantly become a family favorite. Simple, yet fantastic!

This recipe was excellent, I wondered why so many garlic cloves, but when you taste the flavor you will know! Sauce was a bit thin, though, so reduce a bit longer or thicken.

This turned out great! Even my 4-year-old who is nearly impossible to feed ate everything! Like one of the other reviewers, I didn't have garlic cloves, only minced garlic, so I put some of this in the cavity of each hen with the rosemary sprigs and lemon wedge. I also added another spoon or so of it to the sauce for basting. I cooked the hens breast side down and they were so tender and juicy! This recipe is a keeper!

This recipes was easy and fabulous. I followed the directions for the most part but only used two birds. I also doubled the sauce as i like alot of sauce. The time listed for cooking was right on the money and the sauce turned out excellent. I will definitely be making this again in the future.

pretty good flavors, just use a meat thermometer to measure doneness (my hens took about an hour at 350. This recipie was good, but made me realize I just dont like Cornish Game Hens, they are too greasy. Would try on a chicken or with pork loin.

this recipe came out wonderful. as another reviewer said, the sauce came out a little thin and i wish i had used corn starch to make it a little thicker. It went wonderful with some garlic mashed potatos and sweet corn. my girlfriend had never tried Cornish game hen before and loved how flavorful this recipe came out.

I followed the recipe almost exactly (I cooked the hens breast side down until there was only 15 min left and I also only used two hens) and it turned out great! My husband has been raving about them and I'm sure I'll be making them again soon. Once I reduced the sauce, it was just enough for the two hens, so if you make 4 be sure to double the wine and broth.

I didn't love this recipe. I'm not a huge cornish hen fan but I do like to make them a few times a year, and I have yet to find a good recipe for them. With this recipe the chicken smelled great while it was in the oven but there wasn't a lot of flavor. Most of what was in the bottom of the pan burnt so I was not able to make the sauce.

This is one of my husbsnds favorite meals to cook, and I only had to show him once. He's becoming a quite the sous chef. I think the sauce is more suited for 2 game hens instead of 4.

I've made this twice and my husband loves it. I marinated the hens with olive oil, salt and pepper as the recipe says, but I added dry herbs and then put the hens in the fridge for a few hours before sending them into the oven.

What an absolutely wonderful sauce this made! And so simple and easy with just a handful of ingredients. Did not add anything (did use dried Rosemary in place of fresh) and it was absolutely wonderful. However, haven't made Cornish game hens in quite some time, and while they make an elegant presentation, I very much prefer the flavor of chicken. Will definitely try this recipe again with either a whole roast chicken or pieces, and will increase sauce ingredient quantities. Did not use any thickening agent; reducing down yielded a wonderfully tangy, rich garlicky sauce. The cloves of roasted garlic would be an additional treat spread on toasted bread; we just ate them along with everything else. If anyone has any suggestions for using this recipe with whole or cut-up chicken, please share! Wonderful side dish for this are the Twice Baked Sweet Potatoes, also found on this site.
