'I first tried this fuss-free way to cook traditional corned beef and cabbage for St. Patrick's Day a few years ago,' reports Karen Waters of Laurel, Maryland. 'Now it's a regular in my menu planning. This is terrific with Dijon mustard and crusty bread.'

THE comic strip Maggie and Jiggs inspired me to serve this meal. Whenever Maggie asked Jiggs what he would like her to cook, he answered, 'Corned beef and cabbage.' Lucky's Lucky Corned Beef and Cabbage

A nice bowl of Lucky's corned beef and cabbage will bring you luck on St. Patrick's Day or any cold day. Serve in a big bowl with bread of your choice. I like Irish soda bread with it.

This recipe takes time but you won't be disappointed. Give yourself a little luck o' the Irish with this Americanized version of an Irish feast. Serve with butter and Irish soda bread.

Corned Beef and Cabbage

Directions are included for corning the beef brisket (a 7-day process). The brisket is then simmered until tender, and vegetables are added toward the end of the cooking time. Serves 14 to 18.
